In a grass only context, the flavor of the meat will vary throughout the year depending on what the cows have been eating, which in turn will vary dependent on which plants have had the most energy within the last few months. On our ranch, what most people consider to be generally the best flavor (for our culture), will occur by harvesting fat cattle in August or September. We do sometimes have cattle available at other times but we cannot vouch for how similar the flavor and tenderness will be compared to the ones available in August/September. Generally, if one is planning for just hamburger and roasts, then the variance in flavor won't be much of a factor. If one is interested in steaks and special cuts, the August/September harvest will be the best bet.
We keep a running list of folks (first come first serve) who are in line for these cattle when they become available. The price is currently $1.50 per pound live weight (our cows typically will average 1,000 pounds). This includes hauling to the processor of your choice (within 50 miles of Mountain View). The price for processing will vary depending on which processor you choose and what cuts you want. Call the processor of your choice for their current prices.
Field dressing your animal is available for $100. Field dressing involves dispatching the cow while they are calm in the pasture here at the ranch. This prevents elevated cortisol levels in the animal which can adversely affect flavor and tenderness.
